Chef Ernst Riedl has been heading our gourmet cuisine team for nearly 30 years, marrying traditional South Tyrol recipes with the best of national cuisine. He pays special attention to freshness and flavours, treating the ingredients carefully so that they do not lose any of their precious values during their preparation.
